Invasivore.org : Eat Invasive Species

In honor of National Invasive Species Awareness Week (Feb. 28 – Mar. 4), we want to bring your attention to a new on-line project, http://invasivore.org. Eating invasive species seems like an obvious response to the ecological and economic harm caused by biological invasions. However, we recognize that invasive species do not tend to share the traits of species susceptible to eradication by harvest; instead, education is the most effective tool in the management of biological invasions.
Invasivore.org grew out of an idea developed in an NSF-IGERT program, Global Linkages of Biology, the Environment and Society (GLOBES) at the University of Notre Dame. At invasivore.org, our main goal is to promote invasive species awareness by encouraging people to eat invasive species. Several times each week we post recipes and other information on finding and preparing a wide array of edible invasive species. We propose that this culinary courage can be digested into the will to make informed decisions that will ultimately prevent species introductions. We invite you to visit invasivore.org, enjoy our recipes and use the site as a forum to discuss the benefits and risks of eating invasive species, keeping them on your mind and on your plate.
